Imo-kenpi(芋けんぴ)_Japanese old-style sweet patato snack

I like Imo-kenpi芋けんぴ). Imo-kenpi is also called Imo-karinto芋かりんとう).
It is one of Japanese old-style snacks and made from very simple ingredients.

Usually additives are not included and only sweet potato, vegetable oil and sugar is used.

Imo-kenpi is a snack with a simple flavor. It is coated with sugar candy so very hard and crunchy. If your teeth condition isn’t good, I don’t recommend it.

You can buy Imo-kenpi at supermarket in Japan.

Almost of all Imo-kenpi is nice taste. But I like the Imo-kenpi which is made from traditional recipe in Tosa. ( Tosa is Kochi prefecture’s old name.)

You can buy the best taste Imo-kenpi at Kochi souvenir shop or if you are lucky, you can find it at other prefecture's shops.

Recently I bought this at the drugstore in my neighborhood.
I bought it many times because it was very good taste .

I have never made Imo-kenpi at home but approximately how to make is like this:
1. Cut sweet potato thin (for example 2mm-width) sticks.
2. As soon as cut potato, soak them into water to remove harshness.
3. Wipe them by paper towel and spread them on the other paper towel and dry them for more than one hour.
4. Deep fry them at law temperature (about 170℃) oil for about ten minutes.
5. Put sugar and water (tablespoon3(45ml): tablespoon 2(30ml)) into pan.
6. To heat it until it becomes caramel color.
7. Put 4. into 6. and mix well.
